I could eat these at least once a week. 😋 RECIPE - Makes 7 tacos INGREDIENTS: 35 raw shrimp 1 cup of Bang Bang sauce, divided 7 street tacos tortillas 2 cups Shrimp & Fish Tacos Coleslaw Cajun seasoning to taste DIRECTIONS: 1. Marinate the shrimp with 1/2 cup of bang bang sauce for at least 30 minutes. 2. Prepare the coleslaw while the shrimp is marinating. 3. Drain excess marinade from shrimp and then pour them on an oiled, hot griddle or skillet. 4. Cook for a few minutes and then flip. 5. Put the tortillas on the griddle/skillet. 6. Season the shrimp with Cajun seasoning. 7. Flip the tortillas over and once they’re golden on both sides, place them in a taco stand. 8. Fill each one with 1/4 cup of the coleslaw, 5 shrimp and then drizzle on some bang bang sauce. It was a go to side dish because my family loves it. Even my husband who isn’t a fan of veggies. How could you not love it with all that cheese?! 🤩 RECIPE: Makes 3 cups INGREDIENTS: 1 head of cauliflower 1 tsp minced garlic 2 Tbsp butter 2 oz cream cheese 2/3 cup heavy cream 1 tsp dijon mustard 1.5 cups shredded sharp cheddar cheese, divided 1/4 tsp salt 1/4 tsp black pepper 1/4 tsp garlic powder 1/4 tsp onion powder STEPS: 1. Cut the cauliflower into bite sized pieces. 2. Heat 2 Tbsp avocado oil in a skillet over medium heat. 3. Add the cauliflower and garlic to the skillet and cook for 10 minutes, stirring often. 4. Once the cauliflower is fork tender, put it in a greased casserole dish. 5. Turning the heat to low, melt the butter and cream cheese in the skillet, stirring constantly so that your cream cheese doesn’t burn. 6. Stir in the heavy cream and mustard. 7. Next, add 1 cup of the sharp cheddar cheese to the skillet and stir until all of the cheese is melted. 8. Season the cheese sauce with the salt, pepper, garlic powder and onion powder. 9. Pour the cheese sauce over the cauliflower and stir gently. 10. Top with the remaining cheddar cheese. 11. Bake at 400 F for 15 minutes and then broil for 2 minutes. Ingredients- 2 small cauliflowers, cut to florets 1 teaspoon of salt for the boiling water 6-7 cups of water to cover the cauliflower 1 Cottage cheese 2 cups of shredded mozzarella cheese Handful of chopped parsley 1 tablespoon of chopped dill 1 sliced scallion 1/4 cup of olive oil 2 eggs 1 teaspoon of salt 1/2 teaspoon of black pepper 1 teaspoon of garlic powder 1 teaspoon of Dijon mustard 3 tablespoons of all purpose flour 1 teaspoon of baking powder For the topping- sesame seeds and olive oil spray Method- 1. In a large pot put the cauliflower florets with salt and cover with water. 2. On medium heat boil the cauliflower florets for about 15-20 minutes until they start to soften. 3. Drain the cauliflower and place them in a bowl. 4. Using a potato masher, roughly mash the cauliflower so it’s still chunky. 5. Add the rest of the ingredients and mix it all well. 6. Using an ice cream scoop sprayed with olive oil, scoop from the mixture and place on a baking sheet with a parchment paper. 7. Using a tablespoon, gently flatten each of the latkes. 8. Sprinkle sesame seeds and spray with olive oil. 9. In a preheated oven on 420F/220C, bake the latkes for 20 minutes. 10. Transfer to convection broil on 450F for 7-8 minutes to get a nice golden color. 11. Place the latkes on a nice plate, garnish with fresh parsley leaves, and serve it with Greek yogurt. Enjoy!
