Arroz con Pollo (ACP) 🧀🍗 This is easily one of our FAVORITE family dinners. It’s the version of arroz con pollo I always ordered at Mexican restaurants when I lived in Virginia: Mexican rice, seasoned chicken, and an absolutely unreasonable amount of queso. 😂 I couldn’t find it prepared this way after moving to Washington, so eventually I learned to make it myself.
